8 Potato medium (2-1/4" to 3-1/4" dia) Potato
2 Tbsp Olive Oil
1 Tsp Salt
Peel/wash potatoes and cut into halves.
Preheat oven to 400F.
Lightly brush baking pan with olive oil.
Place potatoes in a medium sized saucepan and cover with cold water.
Bring to a boil, reduce heat to medium-high and boil for 5 minutes.
Drain well.
Pat potatoes dry and let cool for 10 minutes.
With a fork, gently rake the rounded side of each potato half and place flat side down in baking pan.
Brush with olive oil.
Bake until golden and crisp, 50-60 mins.
Turn twice during cooking time, and serve hot with sea salt to taste.
