1/4 Cup Lemon Juice
1 Cup, diced Celery
16 Oz Shrimp
2 Cup Couscous
1/2 Cup Olive Oil
1/2 Cup, chopped Scallions
1 Tsp Celery Seed
2 1/4 Cup Water
3 Tbsp, drained Capers
1 1/2 Cup, chopped or sliced Tomatoes
1/3 Cup Spearmint
1 Cloves, minced Garlic
PREPARATION: Chop garlic, celery, tomatoes, scallions, and mint.
Peel and cook shrimp if not already cooked.
Whisk first 4 ingredients in small bowl.
Season dressing with salt and pepper.
Place couscous in large bowl.
Pour water over.
Cover and let stand until water is absorbed, about 10 minutes.
Fluff with fork.
Add shrimp, tomatoes, celery, green onions, mint and capers.
Mix in dressing.
Chill until cold, about 30 minutes or up to 2 hours.
