1/2 Cup Quinoa
1 Tbsp Olive Oil
2 Tbsp Olives
1/2 Large (8-1/4" long) Cucumber
1/2 Medium whole (2-3/5" dia) Tomatoes
1 Tbsp Lemon Juice
2 Tbsp Parsley
1 Tbsp Spearmint
1 Dash Salt
Prepare quinoa as per package directions; let cool completely.
Dice all the vegetables.
Drizzle the olive oil over the quinoa, then add olives, cucumber, tomatoes, parsley, and mint.
Squeeze 1/2 lemon over it and toss well.
Taste for salt and adjust as needed, add more lemon juice if needed.
