1 Fruit, without skin and seed Avocados
5 Medium (3/4" to 1" dia) Radishes
1/2 Small Onions
1 Large (8-1/4" long) Cucumber
1 Lemon yields Lemon Juice
2 Tbsp Olive Oil
1 Cloves, minced Garlic
1 Tbsp chopped Shallots
1 Dash Salt
1 Dash Pepper
1/4 Cup Parsley
Chop the avocado, radishes, onion, and cucumber.
Set aside.
Make the dressing by combining the lemon juice, olive oil, minced garlic, minced shallots, salt and pepper in a large bowl.
Mix thoroughly.
Add the chopped avocado, radish, onion and cucumber to the bowl.
Toss with the dressing until everything is evenly coated.
Add more salt and pepper if rdesired, garnish with parsley, and then serve.
