2 Cup cherry tomatoes Cherry Tomatoes
2 Large (2-1/4 per pound, approx 3-3/4" lo Red Bell Pepper
1 Cucumber (8-1/4") Cucumber
1/3 Cup, sliced Onions
3/4 Cup (8 fl oz) Plain Yogurt
3 Tbsp Water
2 Tsp Olive Oil
1 Tsp Lemon Zest
1 Tbsp Lemon Juice
1 Clove Garlic
1 Tbsp Dill Weed
1 Tsp, leaves Oregano
1/2 Tsp Salt
1/4 Tsp Pepper
1/2 Cup, crumbled Feta Cheese
3/4 Cup Spearmint
3 Olives Olives, Kalamata
Halve the tomatoes, and dice the peppers, cucumber, and onion.
Set aside.
Whisk together yogourt, water, oil, lemon zest and juice, garlic, dill, oregano, salt and pepper in a small bowl.
Put all remaining ingredients in a large bowl and toss together; spoon on dressing and toss to coat.
