3 Tbsp Olive Oil
8 Breast, bone and skin removed Chicken Breast
6 Strip cooked Bacon
1/3 Cup (not packed) Raisins
1 Stalk, medium (7-1/2" - 8" long) Celery
2 Stalk Onions
3 Tbsp Pine Nuts
3/4 Cup Mayonnaise-Like Dressing
1 Tsp Lemon Juice
1 Dash Salt
1 Dash Pepper


Heat oil in a pan over medium high heat.

Cook chicken for 7-12 minutes per side until cooked through and no longer pink.

Let rest for 5 minutes before chopping into bite sized pieces.

Meanwhile, place bacon in a cold pan and turn heat up to medium.

Cook until desired crispiness is reached.

Drain, chop, and set aside.

In a medium bowl combine the chicken, bacon, raisins, celery,green onion, and pine nuts

Mix in about 1/2 cup of the mayonnaise and the lemon juice until well mixed.

Taste and add more mayonnaise and the salt and pepper, as needed
