1 Tbsp Olive Oil
1 1/2 Breast, bone and skin removed Chicken Breast
2 Tortilla (approx 7-8" dia) Tortillas
1 Tbsp Dijon Mustard
1/4 Cup (8 fl oz) Plain Yogurt
1 Cup Spinach
1/2 Cup, sliced Zucchini
5 Mushroom Mushrooms
3/4 Cup, chopped Red Pepperrs
1 Tomato Roma Tomatoes
4 Leaf inner Lettuce
1/2 Cup, sliced Red Bell Pepper
Heat oil in a pan over medium-high heat.
Add chicken to the pan and cook about 6 minutes per side or until chicken is cooked through and no longer pink.
Let rest 5 minutes before chopping into bite sized pieces.
Lay 2 large tortillas flat.
Top with all the ingredients and enjoy!
