4 Cup Organic Coconut Flour
1 1/3 Cup, without pits Sweet Cherries
8 Large Egg
15 Date, pitted Dates
1 Tsp Baking Soda
1/2 Tsp Vinegar
1/2 Tsp Vanilla Extract
4 Tbsp unsifted Powdered Sugars
Preheat oven to 350 degrees F.
Prepare a bundt cake pan and set aside.
Combine eggs and dates in a food processor until they form a paste.
Pit cherries and slice in half.
Sprinkle a little of the coconut flour over the cherries, mix well.
Combine baking sode and apple cider vinegar, pour over remaining coconut flour, mix, and add to the eggs.
Whisk until it becomes a fairly dense mixture.
Pour into prepared baking pan.
Add cherries on top with a spatula and push down.
Bake in a preheated oven for about 30 minutes or until a toothpick comes out clean.
Cool on a wire rack.
Garnish with powdered sugar and serve.
