1 Tsp Salt
2 Cup Water
1 Cup Quinoa
2 Cup Parmesan Cheese
2 Extra large Egg
6 Cloves, minced Garlic
1 Tsp, ground Oregano
2 Cup Bread Crumbs
6 Tbsp Olive Oil
Grate zucchini, toss with salt, and let drain 10 minutes in a colander.
Prepare quinoa as per package directions.
Grate cheese.
Squeeze out excess water in zucchini.
Combine all ingredients (excluding oil), form into patties and cook in hot oil in skillet, about 4 minutes per side, let dry on paper towels.
