Ingredients

12 Oz Frozen Organic Blueberries
4 Tbsp Honey
3 Oz Chia Seeds
3 Cup, whole Almonds
1 1/2 Cup Rolled Oats
1/4 Cup Water
1 Tsp Vanilla Extract

Directions

Line a loaf or casserole pan with parchment paper.

Purée frozen blueberries (no need to defrost) with 2 tbsp of the honey and the chia seeds, reserving 1 tbsp of the seeds.

Set this aside to thicken for about 15-20 mins.

While jam is firming up, make the base: Pulse the almonds, the oats, remaining 1 tbsp chia, and remaining 2 tbsp honey, the water, and the vanilla extract in food processor until well combined and sticking together.

Press this base mixture down into bottom of the pan.

Spread jam evenly over the base now.

Freeze uncovered until firm.

Can be eaten out of freezer or fridge!
