8 Potato small (1-3/4" to 2-1/2" dia) Potato
2 Tbsp Dijon Mustard
1 Tbsp Balsamic Vinegar
1 Tbsp Olive Oil
1/2 Tsp Pepper
1/2 Small Onions
Wash the potatoes thoroughly and cut into small cubes.
Place in saucepan, cover with water, and bring to a boil.
Cook until just tender, 10-15 min.
(Do not overcook; keep firm.
) Drain, rinse, drain again, and let cool.
Mix the mustard, vinegar, oil, pepper, and onion in a large bowl.
Add the potatoes and toss gently to coat.
Cover and refridgerate.
Serve cold.
