Baked Zucchini and Tomato with Mozzarella Healthy Recipe

1 Clove Garlic
1 1/2 Medium (2-1/2" dia) Onions
4 Medium Zucchini
18 1/2 Slice, medium (1/4" thick) Tomatoes
1 Tsp Vegetable Oil
3 Dash Salt
1 Dash Pepper
1 3/4 Cup, shredded Mozzarella Cheese


Chop garlic, dice onion, slice zucchini and tomato.

Stir fry zucchini in the oil over medium-high heat, until tender.

Stir fry tomato and onion until juice comes out, then add zucchini and stir together; add in salt and pepper to taste.

Preheat oven to 350 degree F.

Simmer vegetables in low heat for 10 minutes.

Pour into a baking pan and bake for 5 minutes, then add mozzarella on top and bake for another 12 minutes.
