Ingredients

1/2 Potato large (3" to 4-1/4" dia) Potato
1 Tbsp Hummus
1 Tbsp Butter
1 Dash Salt
1 Dash Pepper

Directions

Preheat oven to 400 degrees F.

Poke holes repeatedly into potato with fork.

Microwave potato on high for 3 - 5 minutes.

Place in oven at 400 for 15 to 20 minutes; until fork tender.

Top with butter, hummus, and season to taste with salt and pepper.
