1 1/2 Cup slices Yambean (Jicama)
1/4 Cup Avocado Oil
5 Oz Goat Cheese
3 Tbsp Lime Juice
1/3 Head (5" dia) Lettuce
1 Fruit, without skin and seed Avocados
Peel and cut jicama into matchstick-sized slices.
Coarsely chop lettuce.
Peel, pit and slice avocado.
Loosely crumble goat cheese.
Toss first 4 ingredients in large bowl.
Sprinkle with salt and pepper.
Add avocado and goat cheese; toss gently.
Divide salad among plates.
