1/4 Cup Olive Oil
2 Tbsp Lemon Juice
1 Dash Salt
1 Dash Pepper
9 Cup Arugula
1 Fruit, without skin and seed Avocados
1 Medium whole (2-3/5" dia) Tomatoes
2 Piece Hearts Of Palm
1/3 Cup Pine Nuts
2 Tbsp Parmesan Cheese
In a small bowl whisk together oil and lemon juice to make dressing.
Add salt and pepper to taste.
Set aside.
In a large salad bowl combine arugula, avocado, tomato, and hearts of palm.
Toss with dressing.
Top with pine nuts and cheese.
Serve and enjoy!
