These make a great alternative to French fries with a burger or other grilled meat. Zucchini fries are quick and easy to make and you can even eat them as a healthy snack.
2 medium zucchini
1 tablespoon (3 g) dried oregano
1 tablespoon (7 g) cumin
Preheat oven to 500°F (250°C, or gas mark 10). Cut zucchini in 1 /4 x 3-inch (0.6 x 7.5-cm) sticks, like French fries. Arrange zucchini on a nonstick baking sheet. Spray zucchini with nonstick vegetable oil spray. Combine oregano and cumin and sprinkle over the zucchini fries. Bake for 15 to 18 minutes. Serve hot with low sodium taco sauce or salsa for dipping.
