I was looking for something a little different, and this just came to me. It is a true original and healthy chicken recipe.
6 boneless chicken breasts
1 cup (240 g) fruit cocktail, in juice
2 tablespoons (30 ml) red wine vinegar
2 tablespoons (30 ml) honey
2 tablespoons (30 ml) honey mustard
1. Preheat oven to 350°F (180°C, or gas mark 4). Place chicken breasts in a roasting pan.
2. Puree fruit cocktail, vinegar, honey, and mustard in a blender.
3. Pour over chicken. Bake for 50 to 60 minutes, or until done.
