A richly flavored version of minestrone, with cubed chicken breast adding to the mix. Personally, this is one of my favorite soups.
1/2 cup (80 g) onion, chopped
1/2 cup (65 g) carrot, diced
1 cup (113 g) zucchini, sliced
2 cloves garlic, crushed
3 boneless chicken breasts, cubed
2 cups (470 ml) low sodium chicken broth
2 cups (500 g) dried great northern beans
1 teaspoon (0.7 g) dried basil
1 teaspoon (1 g) dried oregano
2 cups (360 g) canned no-salt-added tomatoes
Parmesan cheese (optional)
Saute onions, carrot, zucchini, and garlic until tender. Add to soup pot with remaining ingredients and simmer 1 to 1 1/2 hours. Add additional water if needed. Garnish with Parmesan cheese, if desired.
