A delightful way to make broccoli something a little different. This time we will prepare delicious broccoli casserole.
6 cups (420 g) broccoli florets
10 ounces (280 g) low sodium cream of mushroom soup
1/4 cup (60 g) low fat mayonnaise
1/4 cup (30 g) low fat cheddar cheese
1 tablespoon (15 ml) lemon juice
1/3 cup (33 g) cracker crumbs
Preheat oven to 350°F (180°C, or gas mark 4). Cook broccoli in boiling water for 10 to 15 minutes, or until soft. Pour into a 11h-quart (1.4-L) casserole dish coated with nonstick vegetable oil spray. Combine remaining ingredients except cracker crumbs. Pour over broccoli. Top with crumbs. Bake, uncovered, for 35 minutes.
