Current dietary guidelines often recommend limiting yourself to no more than one or two meals a week of red meat. But that doesn’t mean we need to give up the taste we love completely. The key is being selective about the cuts of beef that you buy. An ounce of chuck or prime rib contains over 6 grams of fat, but the same amount of round steak only has about 1 gram. Ground beef comes in a range of 5% fat to 20% fat, which is marked right on the package. The ground beef I buy, and what is specified in the following recipes, in 93% lean. You will need to be more careful how you cook your lean beef to get maximum flavor and tenderness out of it.
