Beef Stuffed Banana Peppers

Another delicious beef recipe that uses some excess peppers. The original recipe we used to develop this one
called for frying, but we decided to make them in the oven instead to reduce the amount of fat, since the meat and cheese already have a significant amount.


12 banana peppers, hot or sweet
1 pound (455 g) extra-lean ground beef (93% lean)
1/2 cup (80 g) onion, finely chopped
1/2 cup (55 g) Swiss cheese, shredded
1/4 cup (60 ml) egg substitute
1/4 teaspoon (0.5 g) black pepper
1/4 cup (30 g) flour


1. Preheat oven to 350°F (180°C, or gas mark 4). Wash and clean peppers, then cut off the top and a small part of the bottom of peppers.
2. In a large skillet, saute ground beef and onions until meat is browned. Stir in cheese. Stuff mixture into peppers.
3. Whisk egg substitute and black pepper in a bowl. Dip peppers in egg mixture. Roll in flour, dip in egg again, and roll in flour again. Place in 9 x 13-inch (23 x 33-cm) baking dish and coat surface with nonstick vegetable oil spray until flour is moistened.
4. Bake for 20 minutes, or until cheese is melted and coating begins to brown.
